I used to despise eating fish… that is, until I bravely tried salmon for the first time. It was in the form of a salmon patty – caked in breading and drenched by ketchup to mask the fishy taste. This eventually became the only way I could eat fish. One night at one of my sorority dinners, we tried baked salmon and I surprisingly loved it. Ever since, it has been a delicacy for me at restaurants when I get it (mostly because I’m a broke college student).
Wanting to recreate that light and herb spiced taste, I stumbled upon this recipe and decided to tweak it a bit to create my own. It turned out great – a little sweetness from the honey added and lots of lemon-y goodness. I’m also a sucker for garlic and put it in everything, so it was bound for success with that first splash of garlic. It also helps knowing all the health benefits of eating salmon!

I start my last semester of undergrad tomorrow and I am already in denial to how fast these four years have gone by. Konrad and I started in the new year by going on a ski trip to Winter Park, Colorado with some of our friends.
