Are carbs your weakness? More specifically, are mashed potatoes your weakness? When you go to Thanksgiving and see the creamy, buttery, mashed potatoes does your water at the sheer sight? If you answered yes to these three questions, then I am with you! I could help myself to an entire batch full and not blink an eye. So I set out to make a healthier alternative and although it will never taste like true mashed potatoes (because hello, it’s mashed potatoes), it still has great flavor and I can feel a lot less guilty about eating it!

Cauliflower is a better alternative than mashed potatoes because it is low in calories and is full of vitamins and minerals. One cup of cauliflower contains high amounts of the antioxidant, Vitamin C which is helpful for the growth and repair of tissues in your body. It is also helpful for the formation of collagen, which is used to make skin, scar tissue, tendons, ligaments, and blood vessels. Another added benefit is that it contains a healthy amount of potassium, fiber, folic acid, and isothiocyanate which protects your health and prevents disease.
[yumprint-recipe id=’27’]A note about the recipe – I “healthified” this quite a bit, so it still has a strong “cauliflower” taste. Therefore, if you would prefer to have it taste as close as possible to mashed potatoes, I suggest using butter and sour cream instead of of olive oil and greek yogurt.
