Healthy Chicken Taquitos

One of my favorite go-to quick meals is chicken taquitos from the frozen section of the grocery store.  AKA – not that healthy… hence my mission to create a healthified version!  

Dare I say that these homemade taquitos are 10x better than store bought?!!! Not to toot my own horn, but these turned out dang good.  This healthified version of chicken taquitos is delicious and satisfies my cravings {it was family approved too}.  My favorite part is there are only a few ingredients, keeping it simple, easy, and clean.

As much as I used to love the store bought taquitos – these taste more fresh, light, and all around more flavorful.  The taco seasoning I used was the Old El Paso and the salsa used was just cheapo store bought Tostitos salsa.  Any variation works, I just used those because it’s what I had on hand.
