Whether it be a side dish or the main course, I love a good pasta salad recipe. To be honest, I don’t eat avocados that much unless it’s in guacamole form (I know, I know… i’m crazy). BUT, I need to eat more avocados because they have 20 vitamins and minerals (including potassium, folate, and B vitamins that help fight off disease and infection) as well as healthy fats.
I found a recipe for an avocado pasta salad on Pinterest and I decided to tweak it a bit – it turned out so good. It has a light and fresh feeling to it, similar to how eating guacamole feels.

I found the taste to be great with the almond milk, but if you would prefer to try it with the buttermilk, let me know what you think!
