Awhile back I posted on instagram a no-bake lemon cake I made that was ah-mazing, but unfortunately pretty unhealthy. I made it my mission to make this healthier but still keep the same great taste and I would like to say that I did just that!
The original recipe (pictured above) had 279 calories and 44 grams of fat per slice (wowza!)
By cutting out the powdered sugar topping, using 1% milk instead of whole milk, and using greek yogurt (half and half with the whip cream instead of only using whip cream), I was able to reduce the calories to 168 calories and 18.5 grams of fat per slice! Unfortunately, it is a little less pretty 😀
This recipe is still a treat and is by no means “healthy”. However, it is significantly healthier than the original and tastes light and fresh. Not to mention it is very easy to make and requires no baking! My family definitely approves of this recipe and it is always gone within the first day! In all honesty, I like this recipe better than the original simply because it is less rich and feels a lot lighter.
