It’s October 2nd, which basically means it’s Halloween, right?! To get in the festive spirit, I concocted these pumpkin themed stuffed peppers 🙂
I have been dying to make a stuffed pepper recipe with quinoa because it is loaded with protein and nutrients. This dish is bound to be loved by my vegetarian friends and my meat lovin’ friends too!
