Chicken Taco Spaghetti Squash

Real talk – I was diagnosed a little less than 6 months ago with Hypothyroidism and even though my TSH levels have regulated, I still have been experiencing the classic symptoms of fatigue, sensitivity to cold, and more.  I’ve been doing some research and have been reading how important your diet can be in how your symptoms effect how you feel. Needless to say, I want to start incorporate my gluten free options into my life, although I don’t know if I could ever truly go gluten free…😕 Anyone who is gluten free- how do you do it??

I found a recipe on Pinterest of a Buffalo Chicken Spaghetti Squash recipe and used it as my inspiration for creating this meal!  I LOVE all things taco flavored – so for me this was a more fitting taste than buffalo.

[yumprint-recipe id=’29’] This recipe left me feeling full and NOT having that icky heavy feeling.  If you want to keep this gluten free, make sure to not use a greek yogurt that has hidden gluten in it, I read somewhere that some may have that.

Overall, consuming less gluten (and maybe someday going completely gluten free) is going to be a challenge but I am excited to see the results and see if I start to feel better!  This recipe will be added to my meal prep list 🙂

    Hey Marisa! I love your taco twist on our Buffalo Chicken Stuffed Spaghetti Squash. Tacos are life. Amiright?!

    Going gluten-free was a pain in the butt for me nearly 5 years ago but since I suffer from a rare autoimmune condition it was worth giving it a 100% for a few months – and you know what? My symptoms improved! I’m still GF to this day but if a piece of homemade sourdough bread or a really great microbrew crosses my path I’ll mindfully enjoy a small portion – savoring every bit! One of the things that helped me was to pass on all the gluten-free breads and baked goods (because they just weren’t as good as the real thing) and adapt a more ‘paleo’ lifestyle focused on whole, unprocessed foods – that made it so much easier for me!

      Jessica – Thanks for the great inspiration on this recipe! And that is great advice – I have heard the same about passing on the baked goods if gluten free. I have definitely already found it difficult to make a transition, so I will do more research and definitely look into paleo style diets 🙂
