Chia Seed Pudding

Okay so I have been dying to post about one of my favorite “super foods”…. chia seeds {cha-cha-cha-chia!}  And I have found one of my favorite recipes that incorporates chia seeds.

When I first heard about chia seeds, I couldn’t believe people would eat them.  All I could think about were the chia seed pets that were on infomercials.  Little did I know how beneficial those tiny little seeds are to our health!

Chia seeds are a great source of omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants and calcium.  Chia seeds are unprocessed, whole-grains that can be absorbed by the body as seeds (unlike flaxseeds).  They can absorb water up to 20 times their weight!

Its very easy to add these tiny seeds into your daily diet without even noticing {they have a neutral nutty flavor}.  A lot of times you can sprinkle them on salads, cereals, yogurt, sandwiches, or you can put them in your smoothies.  You can also mix them with water and make them into a gel.  If your diet does not contain a lot of fiber and protein currently, I would suggest by starting out with smaller amounts of the seeds when you put them in your foods.  If you consume too much without allowing your body to become familiar with it, then you can experience bloating and diarrhea.

Benefits of chia seeds:

  • Great source of omega-3 fatty acids – a crucial fatty acid that many of us do not get enough of in our diets.  Click here to read about the benefits of omega-3 fatty acids.
  • They expand in your stomach, allowing you to feel more full and therefore eat less.
  • It is an excellent source of fiber.  One ounce of chia seeds contains 11 grams of fiber.

    I’m so sorry to hear about Cody! Losing a pet really is like losing your best friend. I’m glad you have such sweet pictures of your time together.

    I love putting chia seeds in my smoothies and overnight oats, too!
